some x-mas break eats

my mom and i ordered pizza hut one day. this was the first time i had ordered a vegan pizza from pizza hut since going vegan almost 2 years ago. i think next time i need to get the veggie lovers pizza and emphasize extra sauce even more than i already did. i'm just happy to have been able to eat an already made pizza for once.i made homemade spaghetti sauce, but as per usual, the second time i made it=not as good. i'll go ahead and blame it on my poor chopping abilities because of this stupid broken wrist. anyway...the sauce had sauvignon blanc in it--i recommend something a little more tangy like chardonnay in cooking. it has red bell peppers, mushrooms, onions, and garlic with garlic powder, onion powder, and italian seasoning. unfortunately, those delicious looking breadsticks had butter on them even though my mom offered to make them with olive oil instead...my BAD.my mom made a birthday cake for my dad, but she said it was also a get well cake for me. my dad never ate any of it saying that he didn't really like this cake that my mom makes [wacky cake!]. but i happily ate half of it. i would say it helped me get start to get well! [THANKS MOM!!!]
finally, i made hummus--with red bell pepper and broccoli. unfortunately, the broccoli made it taste funny the next time i went to eat it so i left it for my mom.

all of this typing is making my hand tired and irritated. starting school with a broken wrist is challenging let me tell you!!!!!!

but it also spices things up a little and will make me exceptionally grateful when i have full use of it once again.

maybe when it's healed i'll stop eating foods that are less than exciting...like my sloppily spread pb&j this afternoon.

the next few days are going to be busy with school, work, writing projects, and deciding my life goals [[i am taking the GRE the 19th! ahh]].

so anyway. yesterday's food was not very exciting. i had a piece of toast with pumpkin butter...forgot my carrot sticks for lunch [i have class from 11-3:15 on tues./thurs.]. so, i ate a mini bag of peanuts.

for a snack i ate the carrots with grandessa hummus. mmm! i'm not a huge fan of their garlic flavor. but the red pepper and original tahnini are declious!!!

for dinner, i made a curried veggie stir fry. i will tell you this...it is the ugliest food i've made. but it is sooooo delicious. in fact, i don't really even like the way it smells, but the taste is so delicious. it contains, broccoli, cauliflower, tomato, green bell pepper, onion, and banana peppers. i stir fried it in white wine [i wanted to use up the bottle], cayenne pepper, tabasco sauce, lots of yellow curry powder, onion powder, and pepper. i steamed the broccoli and cauliflower for a little bit in the microwave first. i should have done it a little longer because it didn't get as soft as i had wished. overall, pret-ty delicious though.

autumn goodness

i worked 9 hours today...so i came home and had too much PBR. i am making up for not being able to tailgate for the ILLINI game right? sure. anyway...FOOOOOOOD:::

the cauliflower and carrots <from my dad's garden!> i had with garlic hummus the other night...
i made squash yesterday. i never thought i liked it. but when i went vegan, i had yellow squash and i enjoyed it in fajitas. so, my mom gave me this acorn squash from my dad's garden to take back to school with me. i baked last evening after drizzling with olive oil and seasoning with salt and pepper. it was delicious!!!!!!!!!!!! i was amazed b/c i thought i hated it. it was like a potato, but different. but great. and delicious. yum.
