a catch-up post...sooo many food picturesss

i made pita bread the other day. however, i debated whether i should freeze it or if i should make pita chips. since my mom said she would eat some pita chips [&& i am having a hard time keeping up with eating the food i make] i decided to make them into chips.
i froze three of them and used the rest for the chips.


i enjoyed them with this hummus my aunt had at her house on the 4th of july. i don't love this brand, but it wasn't bad. i've had soooo much hummus lately, it's insane!


the following apple pie was made from apples i got at an auction my dad goes to.


i made my own crust with coconut milk, rolled oats, water, flour, mayple syrup, and vanilla.


it was pretty good, but nothing to write home about. it probably would have been much better with a scoop of ice cream. it looks seriousy lacking...

eggplant hummus. soooo good! i remember sabra being my favorite hummus, but this definitely comes in close to being better. i ate it with these rice crackers that i found at our international food store. these rice crackers are vegan. and are delicious. and they will be taking the place of tortilla chips in my life from now on.

there are only 110 calories per serving and 0 grams of fat.


they are natural and delicious which makes me a happy camper.

home is grand && these are the reasons why...

i have been trying to upload photos for the past 4 days, but the internet is extremely shady here so i finally succeeded today.

these are frozen mango and cherries. i 'snacked' on these the first night home--and by snacked i mean ate half of each bag.the coffee everyday is terrible for me, but it's honestly what i look forward to. the morning routine i have going is pretty blissful for me right now so i am going to go with it.
last friday, i apartment shopped all day. good news is that i got everything squared away and i had a delicious meal at thai pavillion. i am going to be frequenting that place many times next year. the actual dish looked much tastier than the leftovers.
this is asparagus from my dad's garden. it is covered in liquid smoke, onion and garlic powder, and garlic. i shouldn't have cooked the garlic, rather i should have added it afterwards as i normally do. still so great!
the glassware i am using was my great aunt's. it's from the depression era and is called---wait for it--depression glass. it's been sitting in my mom's china cabinet so i asked if i could use it. i thought it was pretty cool.

we grilled out for mother's day. my brother is an expert griller. i marinated the red peppers, onions, and asparagus in spicy dijon mustard, a bit of soy sauce, olive oil, and onion and garlic powder overnight. he grilled everything for about 10-15 minutes. it was so delicious! my mom really enjoyed the onions. :)

i've been in the mood for an icecream like treat so i've been making the frozen banana concocotion in the food processor quite a bit. i don't use the food processor as much as i thought i would. sorta wish i didn't get it, but i guess it's worth it for this:
this is a little drink i made. [non-alcoholic]. haha. it has diet 7up, a little bit of lime juice and water. so, bascially it is watered down diet 7up. but i like it...

and my weekend of food looked a little like this:::

while it may look like chili, it is actually stuffed pepper soup...but it does taste like chili. and those are breadsticks. they are frozen garlic ones and i just put olive oil and garlic powder and a bit of salt on them. they are HEAVENLY. i ate 6 of them throughout the day on saturday.

i need to start finishing what i have in the freezer before making new things. but, cooking for one sucks since i always have leftovers. i end up eating the same thing for 3 days in a row--at least i kind of like doing that sometimes.

i decided to grill out on sunday. how exciting! i was scared of the fire actually and would never have gotten it started without my roommate's help. i only like grilling out with someone else. doing it by yourself is no fun.


i also made some more BBQ tofu stir fry. i'm sick of stir fried tofu for a long while.

and! i splurged at the store and bought some ice cream. i don't really like spending money on pretend vegan foods because i like making my own version of it better than trying to imitate food i used to eat. but, since my test was today, my wonderful mom told me to get it. :D i love her.
